The best yoga cookies in the world

My daughter's home for the summer from university. It’s the beginning of July but wet and cold today in the north west of England so the perfect time for us to turn on the radio, warm the oven and get mixing.

I first discovered these delicious yoga cookies when I lived in London and attended classes at a local yoga centre. They usually had a fresh batch for sale for students to enjoy after class and I always picked up one to eat on the tube home. They’re very wholesome but delicious too and easy to make. 

I have in the past made these cookies without all of the spices but they taste so much better with the added kick and warmth of the cinnamon, ginger and nutmeg.  

Please note that the biscuits contain peanuts so please omit if this is a concern.

Ingredients (makes 12 cookies)

  • 250g/8oz oats
  • 110g/4oz plain wholewheat flour
  • 50g/2oz raisins
  • 50g/2oz raw unsalted peanuts
  • 150g/5oz brown sugar
  • 1.5 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1.5 teaspoons ground ginger
  • 1/2 teaspoon baking powder
  • Pinch salt
  • 200m/7fl oz sunflower oil
  • 200m/7fl oz milk/oat milk/water

Directions

  1. Preheat oven to 200’C/400”F/Gas mark 6.
  2. Mix all the dry ingredients in a large bowl. Add oil and mix well.
  3. Stir in enough milk or water to make a firm mixture.
  4. Place heaped spoonfuls onto an oiled baking tray, flatten into 10cm/4in rounds.
  5. Bake for 10-12 minutes until golden at the edges. Cool on a rack.
  6. Enjoy!
